The Entremet Files episode #1

I don’t know why it took me SO long to create my first entremet…..well, there’s the sheer cowardice 🙀

But here it is. Won’t be my last.

Clearly too much glaze on the top, which has a bubble or two. Taken together though the flavor was pretty good. The construction ( top to bottom ), mixed berry gel->raspberry mousse->chocolate almond feuilletine for crunch->coconut dacquise and it’s all encased in coconut mousse. They mystery here is why the raspberry mousse layer is so HUGE. These layers were constructed in 2cm high silicone molds and the best I can tell is that somewhere during the thawing process, it just expanded.
